Due to the current outbreak of COVID 19 we are delivering courses to government guidelines making sure they are COVID safe. Subject to the government guidance, local lockdowns and National Lockdowns we may have to postpone some courses in the future at short notice. Come to the Riverbank Restaurant located inside Stafford college, Stafford, for a fantastic and varied 3-course game dinner prepared, cooked and served by the Level 3 chef and hospitality students.

The guest Chef for the Game night is Ralph Skripek otherwise known as the wild chef who is the chef patron of The Butler’s Pantry In Derby. Ralph will be spending the whole day with the level 3 Chefs to complete a master class on preparing and butchering a whole Fallow Deer, Pigeons and Pheasants which will then be used for the nights service in the Riverbank.

Starters

Wild Mushroom Fricassee, toasted sourdough, herb creme fraiche (V)

Venison tartare, pistachio nuts, lemon honey and wasabi rice chips

Pigeon, pearl barley, roasted beetroots, recurrent jus

Mains

Pan fried loin of venison, sweet potato croquette, tender stem broccoli, blackberry jus, roasted wild mushrooms

Butternut Squash, walnut and spinach pithivier, rosemary and caramelized onion sauce (V)

Poached and roasted pheasant breast, Jerusalem artichokes, roasted root vegetables and game jus

Desserts

Pumpkin Pie, spiced vanilla ice cream

Wild berry crème brulee, citrus shortbread

Black forest gateau, cherry sorbet, chocolate sauce (V)
